Apricot has got so many health benefits. Apricot is rich in Vitamin A, Potassium and has high fiber. It is available during May till July. Whenever I buy Apricot, I either make smoothie or jam. This time I thought I’ll make Apricot Lassi. I prefer fresh apricots to dried ones. Dired apricots lose their water content because of the drying process that they goes through. If you have apricots and curd/yoghurt at home, you could make this Apricot Lassi. Apricot has a sweet flavor so if you even add less sugar, it will taste good. A super tasty and refreshing smoothie!

Apricot – 2 cups (halved and pitted)
Fresh curd/yoghurt – 1 cup
Water – little less than 1/4 cup
Honey – 1 tablespoon
Note. The ingredients shown will vary with the original quantity.
Blend all the ingredients in a blender until smooth. Serve chill.
Apricot Lassi is ready!
- Use apricots that are plumpy and also golden in color.
- Use fresh curd/yoghurt.
- You can also add 1/2 cup of ice cubes.
- You can add a pinch of cardamom powder or a drop of vanilla essence.
