Cucumber Moru Kootu
I buy cucumber a lot that too in large quantities. I buy them once in two weeks. I try to make as much recipes as possible with cucumber. Cucumber Moru Kootu is one of my favorite recipes that I make often. My family loves it so much.
It goes well with spicy side dishes. It is a very simple and easy recipe to make when guest comes home. The other Moru Kuzhambu recipes that I like are Poosanikai Mor Kuzhambu, Vendekka Moru Kuzhambu, and Mango More Kuzhambu. Though all the More Kuzhambu recipes are very similar, each one of them have their own taste. I love them all. Here goes the recipe of Cucumber Moru Kootu…

Ingredients

Cucumber (vellarikka)  – 2 cups (Peeled & diced)
Plain curd/yogurt – 2 cups
Slit green chillies – 3 nos.
Turmeric powder (manjal thool) – 1/4 + 1/4 tsp
Water – 1 cup
Salt – as desired

For Seasoning

Finely sliced shallots/small onions – 5 or 6 nos.
Red chillies (kanja molaga) – 3 or 4 nos.
Curry leaves (karuvepillai) – a sprig
Finely minced ginger – 2 teaspoons
Turmeric powder (manjal thool) –  1/4 teaspoon
Fenugreek seeds (vendhayam) – a pinch
Cumin seeds (seeragam) – 1/4 teaspoon
Mustard seeds (kadugu) – 1/2 teaspoon
Garlic (poondu) – 2 to 4 nos. (optional)
Oil – 2 tablespoons

Note. The ingredients shown will vary with the original quantity.

Preparation 

1. Heat oil in a pan and add mustard seeds (kadugu), cumin seeds (seeragam), and fenugreek seeds (vendhayam). Once mustard seeds splutter and cumin seeds sizzle, add shallots/small onions and red chillies. Add minced ginger and curry leaves. Now add cucumber pieces and salt.
2.  Add little water and cook for 2 minutes. Then add turmeric powder and slit green chillies. Cook for 5-7 minutes or until the cucumber pieces become soft. Meanwhile, blend the curd/yogurt along with 1 cup water. Pour the yogurt mix into the cooked cucumber and stir continuously. Simmer on low heat for 5 minutes. Never allow the curry to boil. Keep on stirring for a few more minutes. Add more salt if required.
Now, Cucumber Moru Curry is ready!
