My mom is a huge fan of Seepu Murukku. During Diwali festival, she would tell me how she used to help my grand mother in making Seepu Murukku. These days we have the achu available. Those days, my mom said they make using a new and clean comb. My grand mother is very famous for making Seepu Murukku among relatives it seems. My mom, being the eldest daughter, would help her by gently folding the dough in comb and arranging them in a plate. She said then my grandmother would deep fry it. My mom loves it so much. My eldest daughter Sanvi loves Murukku so I requested my mom four days back to make Seepu Murukku for Sanvi. She made it for all of us. We split the deep fried Seepu Murukku into two batches: one with sweet (sugar paagu) and the other without sweet (sugar paagu). Both tasted yummy.
In my ingredients section, I have listed 2 eggs but we experimented the recipe twice. First time with two eggs and second time with only an egg. With addition of two eggs, the dough combined very well and was quite easy to roll it in comb. When deep fried, we could slightly get the taste of the eggs. On the other hand, with one egg, the dough came out quite well and also did not have the taste or smell of an egg. It depends on you whether to add an egg or two. If you like Sweet Seepu Murukku, go one step further to make sugar syrup and then coat Seepu Murukku with sugar syrup. If not, you can just eat it like that.

Yield. 4 cups
Rice Flour – 2 cups
New and Clean Comb – 1 no.
Coconut – 1 no.
Eggs – 2 nos.
Sugar – 1 cup
Oil – 1 cup
Salt – 1/4 teaspoon
Note. The ingredients shown will vary with the original quantity.
1. Dry roast rice flour in low-medium flame and sieve the roasted rice flour once. Keep it aside.
2. In a small bowl, add eggs and beat them well. Grate the coconut, add little water to it and grind them well. Now filter and extract the coconut milk.
3. In a large mixing bowl, add the rice flour, salt, and beaten egg. Combine well using coconut milk.
4. Knead well by bringing all the bits and pieces together to form a single soft pliable dough. Now take a small portion of the dough (a medium sized lemon) and make it into a ball by rolling between your palms. The balls should be smooth and without cracks. Do the same for the remaining dough. Place the ball on the comb and flatten them. Slowly start rolling them from one end.
5. Slowly roll them and the comb’s impression should be well seen. Then keep it aside. Likewise, roll the remaining balls.
6. Arrange them in a large plate. Heat oil in a frying pan. Drop a tiny bit of the dough into the hot oil. If it comes up right away, then the oil is ready for frying. Now add the rolled pieces, and fry them on both sides till golden brown.
7. In a medium pan, combine sugar and water. Bring to a boil, stirring, until sugar has dissolved. Once you reach the one string consistency (drop the sugar syrup and see whether it falls down as a single string as indicated in the 5th picture), switch off the stove and allow to cool.
8. Finally, drop the fried Seepu Murukku into the sugar syrup, and give a quick stir until it has blended well with the sugar syrup.
Now, Sweet Seepu Murukku is ready!
