I have bread at home all the time as my family loves bread. Whenever I feel little lazy, I try recipes with bread. On last Thursday, I was really tired and did not have the mood to cook. At the same time, I wanted to eat a sandwich. I then came up with this recipe “Vegetable Bread Sandwich”. I hardly took 20 minutes to make this dish. Gj came home very hungry and when he had this dish, he liked it so much. Sanvi also liked it very much. When it comes to Bread Sandwich, I usually make Bread Sandwich, Iyengar Bakery’s Bread Sandwich, Sprouted Soybeans/Moong Dal Sandwich and Wheat Bread Capsicum Sandwich. When I am really hungry, then I make Bombay Toast. This sandwich is similar to Iyengar Bakery’s Bread Sandwich, and kids will love it. The butter enhances the taste. My family liked this sandwich so much.

Bread – 10 nos.
Onion (chopped) – 2 nos.
Tomato (chopped) – 2 nos.
Capsicum (chopped) – 1 no.
Carrot (grated) – 1 no.
Green chilli paste – 1 teaspoon
Garam masala powder – 1/2 teaspoon
Coriander leaves (chopped) – 4 sprigs
Mint leaves (chopped) – 4 sprigs
Butter – 4 teaspoon
Salt – as desired
Oil – 2 teaspoon
Note. The ingredients shown will vary with the original quantity.
1. Heat oil in a pan. Add grated carrot and sauté for a minute. Then add chopped capsicum and again fry for a minute. Now add chopped onions and fry till it turns transparent.
2. Add tomatoes, fry for a minute, and then add coriander leaves followed by mint leaves. Saute for a minute, and then add garam masala powder. Fry for two to three minutes. Then add green chilli paste and salt. Combine well and then keep it aside.
3. Apply butter on one side of the bread, and place the vegetable mixture. Then place another bread on top. Toast the bread.
