Fish Mandarin

Fish Mandarin recipe is quite close to my heart. My mom came here to help me during my second pregnancy. My mom is a very good cook, and she tries out several recipes. On a Sunday, she asked us what could she make for lunch.

My hubby suggested something with fish and my dad suggested chicken recipes. Finally, my mom landed up with this recipe. Mandarin is a type of fish but since we did not have Mandarin fish at home, we made it with Tilapia. It would look as if it takes a lot of time but actually not. It is quite simple and easy to make. When you make this recipe, you do not have to make anything else like side dish, curry or noodles. You can have it as such as it has chicken, egg, fish, mushrooms and pineapple. Even if you have very little quantity, your stomach will become full. My mom had it just like that, but I had it with rice. You can plan this recipe for a party also. My family liked this recipe. When your family members want chicken and fish for lunch or dinner, may be you can also try out this recipe. Hope you like it too!

Ingredients

Fish – 1 no.
Chicken – 1 cup
Mushroom – 6 nos.
Chopped onion – 2 nos.
Corn flour – 1 teaspoon
Pineapple chunks – 1/2 cup
Soya sauce – 1 teaspoon
Chilli sauce – 1 teaspoon (you can also substitute with green chillies)
Eggs – 2 nos.
Pepper powder (milagu thool) – as desired
Salt – as desired
Oil – as desired

Note. The ingredients shown will vary with the original quantity.


Preparation

1. Boil the chicken pieces in two cups of water. Drain and reserve the water/broth.

2. Keep the chicken pieces aside. Blend the eggs well in the blender.

3. Add corn flour and salt to the egg mixture and blend again until frothy. Now pour the egg mixture on the fish well.

4. Coat the fish well with the egg mixture. Apply two teaspoons of oil on a griddle and fry the fish.

5. Heat oil in a frying pan. Add chopped onions, sliced mushrooms and boiled chicken pieces. Fry the onions, mushroom, and chicken for five minutes.

6. Add soya sauce and chilli sauce. Add pineapple chunks followed by pepper powder and salt.

7. Add a cup of reserved water/broth and corn flour (mix cornflour in little water) to the mixture, and boil well until the gravy becomes thick.

8. Arrange the fried fish pieces on a serving plate and pour the chicken gravy on top of it. Close the serving plate with a lid for few minutes so that the fish absorbs the gravy well.

Now Fish Mandarin is ready!

Serve. With rice.

Stir Fried Shrimps

A drool-worthy dish!
I found the recipe for Stir Fried Shrimps 10 years ago but made an attempt at it just few months back. I initially thought how this dish is going to turn out, as it did not have usual masala powders. I thought let me give it a shot. I cooked this dish in few minutes. The taste was nothing less than fantastic. I had it along with curd rice. I always love to take shrimp masala or any shrimp dry curry with curd rice. ..atleast a serving otherwise I would feel that my meal is not complete. Hmmm….again love to have this dish right away!
Ingredients

Shrimps (Prawns/Iral) – 600 gm

Butter – 75 gm

Chopped onions – 2 nos.

Chopped garlic pods – 2 nos.

Ginger – 1 piece

Soya sauce – 2 and 1/2 tablespoons

Vinegar – 1 and 1/2 teaspoons

Sugar – 1 and 1/2 teaspoons

Salt – as desired

Preparation

1. In a pan, heat butter and add shrimps and fry for 5 minutes. Sim the fire.

2. Add ginger garlic paste, onions, soya sauce, vinegar, sugar, and salt. Fry well.

3.  When shrimps are cooked, switch off the stove.

Now, Stir Fried Shrimps is ready!!!

Notes.

Wash, clean, and devein the prawns well.

Do not cook shrimp for more than seven minutes, shrimps would become rubbery.

Fried Fish With Lemons
Wondering what the role of lemon is in this recipe? Not much…it is just used at the end just like any other Indian Fried Fish dishes (Simple Fish Fry (Meen Varuval)).  I do not know why it is named like that. However, taste was very good. You should be careful while adding the sauce and vinegar as it may turn sour and salty. So be careful while adding them. The outer layer would be crispy enough and you can just have this dish as an appetizer or with noodles and fried rice (Egg and Soyabean Sprouts Fried Rice).

Ingredients

Fish pieces – 20 nos.
Lemon – 3 nos.
Vinegar – 4 tablespoon
Soya sauce – 4 tablespoon
All purpose flour (Maida) – 3 tablespoon
Ginger paste – 1 teaspoon
Pepper powder (milagu thool) – as desired
Salt – as desired
Oil – as desired

Preparation

1. In a mixing bowl, add all purpose flour and little water and make a smooth thick batter.

2. In a bowl, place fish pieces and add soya sauce, ginger paste, salt, and vinegar. Marinade fish pieces for 3 hours. Now coat the fish pieces in all purpose flour batter just before deep-frying.

3. Heat oil for deep-frying. Now deep fry the batter-coated fish in hot oil till the fish is cooked and golden brown on both sides. Squeeze lemon juice on top.

Notes

Apply 2 teaspoons of vinegar or 2 teaspoons of thick tamarind juice or even juice of half lemon on both the sides of the fish for few minutes. Then, wash the fish. This will help to clean the fish and remove the odor from the fish to a certain extent.

Chicken and Vegetable Noodles | Easy Noodles Recipes

Chicken and Vegetable Noodles

My mom makes a variety of noodles. I learned this recipe from her. It is super easy to make. If you have the vegetables half-boiled, then it is done in few minutes. You can also add egg scramble to make this noodles even more tasty.

I did not add eggs as I thought there were enough veggies. I had this dish along with Fried Fish With Lemons. If you are not particular about having Indian and Chinese food together, then you can also have it with Tandoori Chicken.

Ingredients

Noodles – 1 packet
Boneless chicken – 2 cups
Chopped onion – 1 cup
Mixed vegetables (peas, beans, spinach, cauliflower, broccoli, capsicum) – 2 cups (I have added beans, broccoli, capsicum and spinach)
Soya sauce – 2 teaspoon
Corn flour – 2 teaspoon
Green chillies – 4 nos.
Oil – 2 teaspoons + 1 tablespoon
Salt – as desired

Preparation

1. Chop the veggies, cut the chicken pieces and keep them aside. In a large pan, boil water over high heat. When water has boiled well, add salt and noodles. Boil noodles until they turn transparent and soft. This step will take about 5 to 7 minutes. The cooking time varies for different kinds of noodles.

Notes.

  • Add noodles only when the water is hot or else the noodles will turn soggy and mushy.
  • If your noodles is very long, then break them into two and add them.

2. Once the noodles are cooked, switch off the stove. Now, add plenty of cold water to the cooked noodles and drain the water. Add few drops of oil say 2 teaspoons and then coat the noodles with oil well. Oil will prevent the noodles from sticking to each other. Boil water and add beans.

3. When beans are boiled, transfer them to a bowl. Likewise, in the same boiling water, add broccoli. Cook the broccoli until they are boiled.

4. Transfer the boiled broccoli pieces to a bowl.In a large pan, heat 1 tablespoon of oil. Add chopped onions and green chillies. Fry until onions turn transparent and then add chicken pieces. Fry for a minute.

5. Add raw capsicum pieces, boiled beans and boiled broccoli and fry for five minutes. Then add spinach leaves and fry until spinach becomes little soft. Stir well and add salt. Remember, you have added salt earlier while boiling noodles, so add salt accordingly.

6. Add boiled noodles, fry for a minute and then add corn flour paste. (Make corn flour paste using 2 teaspoon of corn flour and 3 tablespoon of water). Stir once and boil for two minutes. Then add soya sauce and stir once. Simmer the flame and then fry for 2 minutes. Switch off the stove.

Now, Chicken and Vegetable Noodles is ready! Serve hot.

Serve. Any Ketchup or some spicy side dish

 

Chilli Chicken (Indo Chinese Recipe)

 

Preparation Time: 10 minutes
Cooking Time: 20 minutes
Makes: 2 nos.

Ingredients

Boneless chicken – 1.5 cups
Red chillies (kanja molaga) – 4 to 5 nos. (add more if you want it to be more spicy)
Chopped onion – 1 cup
Ginger garlic paste (inji poondu vizhudhu) – 1 teaspoon
Turmeric powder – 1/2 teaspoon
Spring onions – 1 sprig (optional)
Oil – 2 tablespoon + 1 teaspoon

Preparation

1. Heat two tablespoons of oil and add chopped onions. Fry for five minutes and then add ginger garlic paste followed by red chillies. If you want it to be spicy, add more red chillies. Fry until the raw smell of ginger garlic paste goes off.

2.  Add boneless chicken and turmeric powder. Fry well till onions turn light brown.

3. Add one cup of water and salt.  Keep frying.

4. Add a teaspoon of oil and keep frying.

5. Keep frying until the chicken has absorbed the water well or until the dish becomes dry. If needed, add more oil. You can see in the pictures below how the dish becomes dry. Garnish with spring onions.

Now, Chilli Chicken is ready!

Serve. Chilli Chicken can be eaten as such. Still, it goes well with Noodles, Friedrice, and Pulao.
