Fruits n Honey Salad

Bite into goodness!
Generally, you can taste this salad in Indian weddings. I believe a perfect salad should have an aesthetic blend of colours. So here goes the recipe for this nutritious fruit blend salad…

Apple – 1/2 no.

Mango – 1/4 no.

Banana – 1no.

Pomegranate (Madhulai) – 1/2 no.

Sugar – 1/2 cup

Cardamom Powder (Elakka) – a pinch

Honey – 5 tbsps.

Though the recipe calls for pomegranate seeds and mango, I have not used them as I do not get it in my place often. So, I used blackberry and orange. You can use any fruit you like and follow this recipe.

1. Peel the fruits’ skin and cut them into small pieces. Take out the seeds from the pomegranate fruit.

In a large mixing bowl, add cardamom powder, sugar, and honey followed by the cut fruits and pomegranate seeds.

Guacamole is a Mexican dip made from Avocados.

Preparation time. 10 minutes

Ripe avocados – 2 nos.

Minced red onion (preferred) or white onion – 1/2 cup

Minced green chillies – 1 teaspoon (optional)(as desired)

Fresh lime or lemon juice – 1 tablespoon

Black pepper powder – a generous pinch

Chopped ripe tomatoes – 1/2 no. (remove the seeds and pulp)

Finely chopped coriander leaves (kothamalli) – 2 tablespoons

Salt – 1/2 teaspoon

1. In a mixing bowl, add the chopped onion, green chillies, coriander leaves, lime or lemon juice, tomatoes, salt and pepper. If you are not confident about the spiciness, add green chillies little by little and check the spiciness.

2. Cut avocados in half. Remove its seed and scoop its pulp from the peel. Transfer the pulp to the mixing bowl. Using a fork, roughly mash the avocado. Remember, the guacamole should have chunky avocados so do not mash them finely.

3.  Cover the guacamole using a plastic wrap to prevent it from oxidation. Refrigerate until ready to serve.

Serve. Tortilla chips

  • Use only ripe avocados.
  • If you are going to serve the Guacamole after some time, then add the tomatoes at the time of serving.
  • If you don’t have time for cutting onions and tomatoes, take a 1/4 cup of salsa and mix it with mashed avocados.
  • You can also add sour cream to your Guacamole.
  • If you could refrigerate Guacamole for 1 hour, it will give you a best flavor. This is optional.
  • If you are planning to serve it later, cover Guacamole with plastic wrap to prevent it from oxidation. Refrigerate until you serve.

How to check whether the avocados are ripen?

Gently press the outside of the avocado. If the skin is not soft enough to press, then the avocado is not ripe and will not taste good. If they are soft when you press them, avocados are ripe. If the avocados are very soft, then they are past ripe and would not be good.

Mint Yoghurt Raita | Mint Yoghurt Dip | Mint Raita

Mint Yoghurt Dip
I had Mint Yoghurt Raita for the first time in a Non-Veg Potluck few years ago. My share was Tandoori Chicken. Another friend of mine brought this yummy Mint Yoghurt Raita. Actually she did’nt have to bring it, still she brought it for everywhere.

I was only wondering with what dish it would go well because it was just a snack potluck. There were no rice items. When I served Tandoori Chicken to everyone, my friend served this dip. I tasted the dip along with Tandoori Chicken, it was heavenly. We all thanked her for bringing this extra yummy dip. I asked her for the recipe, and she explained it to me in detail. She said I could do it with both mint and coriander leaves. Also this dip goes well with Chilli Chicken, Chicken 65, Pepper Chicken etc. I was doing my Masters at that time and did not have time to try out recipes. I saw the same Mint Dip in an Indian grocery store and bought it. I made the dip using the store bought mint dip but the taste was not even close to what we make at home. When my parents had come here few months back, I made this Raita and they loved it so much. I always wanted to share this recipe in my blog and now here it is…

My hubby is a big fan of salads, but I am not. Though salads are easy to make, I find it very lazy to try and taste different sauces. To satisfy my hubby’s taste buds, I occasionally make these simple salads.

I usually make these kind of salads during Friday nights as we would have an elaborate dinner watching movies with our loved ones. Usually I make salads with fruits like Fruits and Honey Salad, Fruit Salad etc. but this time, I thought I’ll make something with Pineapple. Here it is Pineapple Salad…hope you all like it. You can have it as a side dish for Biryani as well.
