Hotel Style Coconut Chutney

 

My family just loves coconut chutney. In general, when we go to restaurants and order dosa or idli, we would prefer coconut chutney as an accompaniment. Ingredients

Fresh Coconut – 1 Cup (Do not scrap the brown part)

Roasted Chickpeas (Pottukadalai) – 1 Handful

Green Chillies – 2 To 3

Ginger – 1/2 Inch

Garlic – 1 Clove (Optional)

Salt

To Season

Mustard Seeds – 1/2 Teaspoon

Curry Leaves – A Sprig

Oil – 1 Teaspoon

Preparation

1. Grind the fresh coconut, roasted chickpeas, green chillies, ginger, garlic, and salt to a smooth paste. Add very little water and grind it once again. If you want the chutney to be little watery, add more water or else add little water.

2. Transfer the chutney to a serving bowl. In a small pan, heat oil. Add mustard seeds and when it splutters, add curry leaves. Add this seasoning to the coconut chutney. Stir well.

Serve. Dosa, Idly and Ven Pongal.

Notes.

  • Use only fresh coconut.
  • Adding garlic is optional. If you wish, you could also add ginger and also tamarind while grinding. It is only another version.
  • You can also add coriander leaves as a garnish for this chutney.

Quickest Flavorful Dal!

Ingredients

Moong dal (paasi paruppu) – 1/2 cup
Tomato – 1 no.
Red Chilli – 1 no.
Turmeric powder (manjal thool) – 1 teaspoon
Cream – 1 tablespoon (optional)
Salt – as needed

To Season

Ghee – 2 teaspoons
Cumin seeds (Seeragam) – 1 teaspoon
Red chillies – 2 nos.
Grated ginger (enji) – 1 tablespoon
Crushed Garlic (poondu) – 4 pods
Coriander leaves (kothamalli) – 3 sprigs

Preparation

1. Pressure cook moong dal with chopped tomato, turmeric, and one red chilli for 3 whistles.

2. In a pan, heat Ghee and add the ingredients under “to season” in an order. Fry garlic until light brown. Now, add the seasoning to the cooked dal along with little salt. If you want, you can add 1 tablespoon of cream.

Now, Dal Tadka is ready!

Serve: White Rice,Rotis,Avocado Chappathi, Methi Chappathi, Roll Chappathi, Spiced Puris

Banana Fritters | Easy Banana Fritters Recipe

Banana Fritters

Banana Fritters is my mom’s favorite dish. She calls it by a different name. I request her to make this dish for me during the rainy season. She would make so much that each of us will have about 15 fritters. It taste great on the next day too. When I grew up, I eat this dish along with a cup of tea. We buy bananas every week and sometimes, the bananas would ripen quickly.

Sometimes, I would be stuck as I would not know what to do with the ripen bananas. Whenever I have ripen bananas, I make Banana Chappthi, Banana Appam, Banana Muffin and Banana Fritters. This recipe can be made in a jiffy. When I was pregnant the second time, I would make this recipe and eat it right away. I had a strong craving for this dish. It is a very simple and easy recipe. If you have guest at home, with just one banana you can make about 7 to 8 fritters. Try it out and I am sure you like it.

Ingredients

Self-rising flour (Maida) – 1 cup
Sugar – 2 tablespoon
Large bananas – 2 nos.
Grated coconut – 1/2 cup
Baking powder – 2 teaspoons
Salt – a pinch
Oil – for deep frying

Preparation

1. In a large mixing bowl, mix self-raising flour/maida, baking powder, and sugar. Then, add grated coconut, banana, and a pinch of salt. Add sufficient quantity of water to make a medium consistency (neither too thin nor too thick) batter.

2.  Batter should have consistency to mound up in a spoon. Heat oil to deep fry the bananas. The oil should be medium hot. Drop by spoonfuls in small batches.

3.  As banana fritters start becoming brown on one side, turn them over. Once banana fritters turn brown in color, remove and drain them on paper towels.

You can sprinkle powdered sugar on top of the banana fritters just before serving but I love to eat it right away. I cannot wait that long.

 

Now, Banana Fritters are ready! Serve warm.

Serve. With tea or ice cream.

Watermelon Ginger Juice | Fresh Watermelon Juice Recipe

Watermelon Ginger Juice

Preparation Time. 5 minutes

Serves. 2

Ingredients

Watermelon pieces – 2 cups
Lemon juice – 2 teaspoons
Sugar – as desired
Ginger (peeled) – a small piece
Ice cubes – as desired

Preparation

Cut the watermelon and remove its seeds. Take out the red pulpy layer, and chop it roughly into pieces. Discard the outer white layer.

In a blender/mixer, add sugar, watermelon pieces, ginger and lemon juice. Do not add water as watermelon itself has water content in it. Refrigerate for a while and serve chilled. Drink watermelon juice fresh. As the time goes by, the juice will not have the same freshness and taste.

Now, Watermelon Ginger Juice is ready!

Notes

  • If your watermelon is good, your juice will taste good so choose a good watermelon.
  • The juice will separate over time, just stir it with a spoon to recombine.

Avocado Milkshake

Ingredients

Ripe Avocado – 1
Milk – 2 to 3 cups
Sugar – 3 tablespoons
Ice Cubes – 2 to 3 nos.(Optional)

Preparation

Peel the avocado and cut it into two halves. Scoop the pulp of avocado and put it in the blender. Discard the seed. Grind the avocado pulp along with milk and sugar. Then, add the ice cubes and blend it again. I have not added ice cubes as the weather here was already very cold.

Now, the Avocado Milkshake is ready!
